When I’m running late or low on energy (sound familiar?), I turn to easy dinner recipes for kids, and this one is always a winner. You can count on eggs to be available in the fridge plus it’s got just enough creamy cheese and salty ham to be a crowd pleaser every time. Win and win.
TO MAKE EASY BAKED EGGS WITH HAM & CHEESE YOU’LL NEED
- ramekins (or a non-stick muffin tin), coated in butter
- eggs
- sliced ham
- sliced Swiss cheese
- half & half
- salt & pepper
HOW TO MAKE EASY BAKED EGGS WITH HAM & CHEESE
Preheat your oven to 375 degrees F. Coat your ramekins or muffin tin with butter. Line each cup with a slice of ham, then break an egg on top. Pour about a teaspoon of half & half on top along with a sprinkle of salt and pepper. Finish with a quarter piece of sliced Swiss cheese. Repeat this process until you’ve got enough for your group (young kids usually eat one egg, adults eat two), then bake for 12 minutes.
Serve with crusty bread (throw that in the oven while the eggs are baking) and soft salted butter.
