OK, so I love one pot meals and this 3 Ingredient One Pot Bacon Mac and Cheese is definitely a hit around our home. That’s right–it takes just 3 ingredients to make this delicious meal: bacon, Velveeta, and whole wheat pasta (to round out the processed cheese, ha ha!).

If you’re looking for even more added nutrition, you can add milk or cream at the end. This bacon mac and cheese would also be great with broccoli. Just add the broccoli to the boiling water.
3 Ingredient One Pot Bacon Mac and Cheese
Ingredients
- 12 oz bacon, sliced into thirds
- 8 oz Velveeta, cubed
- 16 oz whole wheat pasta (we used shells)
Directions
In a large pot fry bacon until crispy. Set aside on paper towels to drain. Drain off fat and reserve for a later use, if you’d like. Return bacon to pot and add whole wheat pasta. Bring to a boil. Boil for 12-15 minutes, stirring very frequently, or until pasta is tender and most of the water is absorbed. Remove from heat.
Add Velveeta cubes and stir until melted and creamy. Not necessary, but at this point you may now add 1/2 cup whole milk or heavy whipping cream if you’d like the pasta to be even creamier. This also adds additional nutrition and flavor. I also like to top this bacon mac and cheese with dried parsley flakes for extra color. I find when meals are colorful that my kids are more likely to eat and get filled.
3 Ingredient One Pot Bacon Mac and Cheese is an easy and quick meal idea when you’re short on time, but need to fill hungry tummies. Oh, and raise your hand if you like only having to clean one pot after dinner…I know I do! Use disposable plates or bowls and kitchen clean up just got even sweeter.
