Sometimes it takes a little camouflage to inspire our kids to eat healthy foods! That’s the idea behind this Cheesy Chicken and Broccoli recipe! The cheese makes a great camouflage:)
I’m pretty lucky that my son loves broccoli. He is actually a pretty good eater. My daughter, on the other hand, sniffs out all the good stuff and usually won’t eat it. We try to make her at least try everything but we still get the stinky face!
This recipe is fun because everything is covered in cheese!
Here’s what you need:
Cheesy Chicken and Broccoli
Ingredients:
- 2 cups Roast Chicken breasts, cubed
- 1/2 medium Yellow Onion, chopped
- 2 cloves Garlic, minced
- 1 cup Brown Rice
- 2 cups Broccoli, cut into bite sizes
- 3 tablespoons Olive Oil
- 2 1/2 cups Chicken Broth
- 2 Cups Shredded Mexican Cheese
After I sauteed the onions in the olive oil, I added the garlic and chicken just for another minute.
I really like using a roast chicken for recipes like this. The chicken is already cooked and seasoned. All you have to do is break it apart from the bone and cut into bite sizes. It just makes the process so much easier than using raw chicken.
Next I browned the rice for just a few minutes using the remaining tablespoon of olive oil. Then I added the chicken stock and brought to a boil. Cover and simmer for about 15 minuutes until the rice starts to soften.
The broccoli is next. Add it to the chicken and rice mixture, cover back up and cook for another 8 minutes on low.
Once the broccoli and rice are tender, it’s time to add the cheese. I started with a layer of cheese and mixed it into the chicken, broccoli, and rice.
Then I added the remainder of the cheese to the top, covered for about 2 minutes to allow the cheese to melt. You don’t need to put it back on the stove. The cheese will melt with the heat from the dish.
Once the cheese is melted, you are ready to serve.
This is the perfect all-in-one meal for the family!
