Savory Beef Salad with Honey Mustard Dressing
Ingredients
- 1 1/2 – 2 pounds top sirloin steak
- 6 cups spring or baby greens salad
- 2 pears (bosc or red, but any will do)
- 1/2 cup crumbled feta cheese
- 1 Tablespoon spicy brown mustard
- 1/4 cup raw honey
- 1 teaspoon molasses (I used blackstrap)
- 2 Tablespoons apple cider or basalmic vinegar
- salt and pepper, to taste
- 2 Tablespoons olive oil
Directions
In a medium heavy skillet, such as a cast iron skillet, heat the olive oil or medium high heat. Once it barely begins to smoke add steak, seasoned with salt and pepper, and cook to desired doneness (our family eats our steak medium rare). Remove steak from heat and allow to rest for 10 minutes.
Slice pears into thin slices. My kids are not picky eaters, but if yours are then select pears without bruising. Also, that’s black crayon stains on my cutting board…
In a small bowl or other container whisk together the mustard, raw honey, molasses, and vinegar.
Slice steak into thin strips against the grain.
To assemble beef salad, on a plate or in a shallow bowl add 1 cup of salad greens. On top of salad greens add a few slices of beef (since this recipe serves 6 you can divide the strips into 1/6 portions). Top with pear slices, then crumbled feta cheese. Drizzle with honey mustard dressing. My five kids, ages 8-16, love this Savory Beef Salad with Honey Mustard Dressing.
