We are loving this healthy dinner recipe for One Pan Fish and Veggies! This is such a tasty and nutritious one pan healthy fish bake for your family. Kids are going to love all the natural colors and you’re going to love that it’s good for them too.

This such a refreshing springtime and summer meal complete with a rainbow of healthy vegetables. Sometimes it can be hard to get little ones to eat their veggies, but I’ve found when my children are offered colorful options that they tend to be more inclined to try new things. This one pan fish bake required just a small amount of prep time, but results in a yummy family meal that you’ll want to make this recipe often.
One Pan Fish and Veggies
Ingredients
- 1 pound fresh haddock or other white fish (we tend to use 1.3 pounds each time)
- 2 golden beets
- 6 rainbow carrots
- 3-5 potatoes
- 3/4 cup Panko bread crumbs
- 3 Tablespoons olive oil
- sea salt and pepper, to taste
Directions
Coat the fish in one tablespoon of the oil, lemon juice, sea salt and pepper (the image shows the seeds from the lemon on the fish, I removed them when transferring to the baking tray). Cover and chill for about an hour.
Scrub, wash, peel and chop all of your vegetables into similar sized pieces.
Heat the oven to 425 degrees then cook the vegetables in the remaining olive oil until tender and just starting to crisp a bit. Then reduce the heat to 400 degrees and slide the vegetables to the two ends to make room for the fish in the middle. Sprinkle the Panko and a dash of salt and pepper onto the fish. Cook an additional 15 minutes or until the fish is completely white and has started to fake apart a bit.
Allow the one pan fish bake to cool for a few minutes before serving.
