Grandma’s Irish Soda Bread

St. Patrick’s Day wouldn’t be the same without My Grandma’s Irish Soda Bread! I hope you enjoy this as much as I do.

Irish Shepherd’s Pie

Shopping List:

  • 5 Potatoes, peeled and cubed
  • 1/2 cup Milk
  • 1 tablespoon Butter
  • 1 lb Ground Beef
  • 1 Onion, chopped
  • 1 clove Garlic, chopped
  • 1 oz Margarine
  • 1 oz Flour
  • 2 tablespoons Ketchup
  • 2 cups Beef Consomme
  • 2 tablespoons Browning and Seasoning Sauce
  • 8 oz Cheddar Cheese, shredded

Instructions:

  • Preheat oven to 400°
  • Cook potatoes in boiling water until soft. Drain the water and mash the potatoes with the milk and butter
  • In a large skillet, brown the ground beef over medium heat. When the meat is almost cooked through, add the onion and garlic until all is cooked
  • In a small pan, melt the margarine and stir in the flour, cook until dark brown (8-10 minutes)
  • Let cool and stir in the consomme, ketchup and browning and seasoning sauce, simmer until thick
  • Add the sauce to the ground beef and mix
  • Transfer to casserole dish, top with mashed potatoes and sprinkle with the shredded cheese
  • Bake for 15-10 minutes until cheese is melted and potatoes are browned

Colcannon

Shopping List:

  • 3 large Potatoes, peeled and cubed
  • 4 slices Bacon, cut into small pieces
  • 1/2 head Cabbage, chopped
  • 1 Onion, chopped
  • 1/2 cup Milk
  • Salt & Pepper to taste
  • 1/4 cup Butter, melted

Instructions:

  • Cook potatoes in boiling water until soft, drain the water and mash the potatoes in the milk, season with salt and pepper
  • In a skillet, cook bacon over medium heat, drain and set aside
  • In the bacon drippings, saute the cabbage and onion until soft
  • In a large bowl, fold in the bacon, cabbage, and onions into the mashed potatoes. Add the melted butter and serve

Corned Beef and Cabbage

Shopping List:

  • 2 1/2 lbs. Corned Beef Brisket
  • 4 Black Peppercorns
  • 1/4 teaspoon Garlic Powder
  • 1 Onion, peeled and left whole
  • 2 Bay Leaves
  • Pinch Salt
  • 1 head Cabbage, cored and cut into wedges
  • 5 Potatoes, quartered
  • 4 Carrots, peeled and sliced
  • 1/4 cup Parsley, chopped
  • 2 Tablespoons Butter

Instructions:

  • In a dutch oven, add the brisket, peppercorns, garlic powder, onion, bay leaves and salt. Fill with water to cover everything plus one inch
  • Bring to a boil and cook for 20 minutes, skim off any residue that floats to the top
  • Reduce heat to a simmer and cook 2 to 3 hours (you want the meat to pull apart easily)
  • Once the meat is done, add cabbage, potatoes, and carrots into the liquid (make sure everything is covered with liquid)
  • Simmer for an additional 15 minutes or until potatoes are done
  • Stir in butter and parsley and remove from the heat
  • Remove the meat and place on a serving dish, let rest 10-15 minutes
  • Remove the veggies and place in bowl until the meat has rested
