Skillet Pancake with Strawberry Syrup on top, who could ask for a more delicious way to start the day? When it comes to amazing pancake recipes, this one takes the cake! Ha!
We’ve tried every different pancake under the sun, blueberry quinoa pancakes and even pancake rollups! There’s just something about this easy skillet pancake that keeps us coming back for more.
I’m going to warn you, this recipe is kind of like a dessert. If you top it with whip cream and the strawberries, you have a breakfast version of strawberry shortcake and who wouldn’t want to devour this deliciousness?
What you need for this Skillet Pancake and Strawberry Syrup
- 1 Cup Pancake Mix
- 2/3 Cup Water
- 1 Egg
- 1 Tablespoon Butter
- 1 Teaspoon Sugar
- 1 Teaspoon Cinnamon
- 2 Cups Fresh Strawberries quartered
- 1/2 Cup Sugar
- 1 Tablespoon Lemon Juice
- Whip Cream
Instructions
Mix together the pancake mix, water, and egg in a medium sized bowl until it’s just combined – don’t overmix
Grab a cast iron skillet and warmed it up in the oven be placing the tab of butter in the skillet to melt, make sure to spread it around in the skillet before sprinkling the 1 teaspoon of sugar and cinnamon in the bottom of the skillet
Pour the pancake batter into the skillet and bake for 15 – 20 minutes
While the pancake is baking, place your strawberries, sugar and lemon juice on medium heat and cook for about 10 minutes
Use a wooden spoon to smash the strawberries to release the juice
After the pancake is finished, top with strawberries and whip cream. Enjoy this delicious breakfast/dessert!
This is one of those recipes that can easily be changed up to make it the way your family will love it. Do you love blueberries or raspberries? Use those in place of the strawberries to make a different syrup to top the pancakes.
