If you answered yes, you’re in luck!
We are addicted to mug cakes at our house. They are ready in less than five minutes and each person can have the type or flavor of cake they want.
Let me show you how quickly these microwave mug cakes come together!
Do you have a ripe banana lying around? Grab it, because we’re making a banana nut mug cake.
Ingredients:
- 1 small-medium banana
- 1 T vegetable oil
- 1 egg
- 1 T milk
- 4 T brown sugar
- 4 T all purpose flour
- 1 T chopped pecans
- 1/4 t baking powder
- 1/4 t cinnamon
- pinch of salt
- 2 T whipped cream for topping
Supplies:
- microwave
- coffee mug
- fork
Take all of the banana, except for a few slices which you will reserve for the topping, and place it in the bottom of the coffee mug. Use the fork to mash the banana.
Once mashed, add in the egg and whisk with the fork until well combined.
Next, add the milk and oil and combine well.
Then, add the sugar, flour, baking powder salt and cinnamon. Whisk until well combined with the fork.
Stir in the pecans.
Pop the cup in a 800 watt microwave for 3 minutes. (Adjust for more or less cook time according to your microwave wattage.)
When it is done let it cool.
Once cool, top it with the whipped cream, the reserved banana slices and a few chopped pecans, if you want.
You can even sprinkle some cinnamon on top if you like.
Serve and enjoy!
Our 14 year old especially loved this.
It is the perfect dessert for a busy weeknight and to use up those over-ripe bananas!
