Samoas Style Butter Cookie Bars are homemade treats that taste like Girl Scout cookies! Caramel, chocolate, coconut and cookie in one mouthful is sure to delight.
While I’m all about supporting the kids, this cookie bar recipe is where it’s at when Daisies and Brownies stop selling their stash.
WHAT YOU WILL NEED TO MAKE SAMOAS STYLE BUTTER COOKIE BARS:
- 1 stick of butter, softened
- 1/4 cup white sugar
- 1 1/2 cup flour
- 1 cup coconut
- 7 oz caramel sundae topping
- Chocolate sauce or fudge for drizzling
HOW TO MAKE SAMOAS STYLE BUTTER COOKIE BARS:
Preheat the oven to 400.
Pour the coconut out onto a cookie sheet, cook in the oven until toasted and browned.
Using an electric mixer, cream the butter and sugar together. Hand fold in the flour. Mixture will be crumbly, but come together.
Press the cookie mixture into a greased 8×8 pan. Bake for 20 mins or until set up and firm.
Mix the coconut into the caramel and pour over the cookie bars. Spread evenly.
Drizzle with chocolate. Refrigerate until cool. At least 1 hour.
Cut into squares!
