Lemons aren’t just for lemonade! There are so many great recipes that feature lemons. Today on Family Food Live, 5 Fun Ways to Cook with Lemons!

Lemon Cheesecake

Shopping List:

  • 2 (3 oz.) boxes of Lemon Jello Mix
  • Juice from 1/2 Lemon
  • 1 1/2 cups boiling Water
  • 1 1/2 cups cold Water
  • 1 cup Sugar
  • 2 (8 oz.) packages Cream Cheese
  • 1 teaspoon Vanilla Extract
  • Whipped Cream
  • 2 cups Graham Cracker crumbs
  • 1/2 cup Butter, melted
  • Lemon slices for garnish

Instructions

  • In a mixing bowl, combine the jello, lemon juice and hot water, stir until dissolved. Add the cold water and put in the refrigerator until the jello is completely cooled
  • In another bowl, beat the cream cheese with the sugar and vanilla
  • Slowly add the cooled jello, while continuing to mix with the hand mixer
  • Put back in the fridge again and let it thicken for about 1 hour
  • In another mixing bowl, add the graham cracker crumbs and butter and mix and then press hard into your serving dish
  • Set in the freezer until ready to use
  • Fold almost all of the whipped cream into the cream cheese and jello mixture until smooth
  • Pour the cheesecake mixture into the crust and set in the fridge, uncovered for at least 6 hours
  • Add remaining whipped cream on top and decorate with slices of lemon

Lemon Loaf

Shopping List:

  • 3 Eggs
  • 1 cup Sugar
  • 1 cup Greek yogurt
  • 1/2 cup Canola Oil
  • 2 tablespoons Lemon Zest
  • 2 tablespoons Lemon Extract
  • 1 1/2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • For the Glaze
  • 1 cup Powdered Sugar
  • 3 tablespoons Lemon Juice

Instructions:

  • Preheat oven to 350° F
  • Spray a 9×5-inch loaf pan with non-stick cooking spray
  • In a mixing bowl, add the eggs, sugar, and sour cream and whisk together until smooth
  • Continue to whisk while adding the oil
  • Add the lemon zest, lemon extract and combine
  • Add flour, baking powder, and salt and stir (it’s ok if there are some lumps)
  • Add batter to baking loaf
  • Bake for about 50 minutes or until the toothpick comes out clean
  • Let the loaf cool for at least 30 minutes before removing from pan
  • In a small bowl, mix together the powdered sugar and lemon juice until smooth
  • Drizzle on the cooled loaf

Lemon Flavored Rice

Shopping List:

  • 2 tablespoons Butter
  • 1 tablespoon Olive Oil
  • 4 Green Onions, sliced (white parts only)
  • 3 Garlic Cloves, minced
  • 1 teaspoon Lemon Zest
  • 1 cup Long Grain Rice
  • ¼ teaspoon Turmeric powder
  • Salt & Pepper to taste
  • 1 cup Vegetable Broth
  • 1 cup Milk
  • 3 tablespoons Lemon Juice

Instructions

  • In a saucepan, melt butter and heat olive oil
  • Add onions and cook for about a minute
  • Stir in garlic and lemon zest and cook for an additional 30 seconds
  • Add rice, season with turmeric, salt and pepper, and cook for 1 minute
  • Stir in vegetable broth, milk, and lemon juice and bring to a boil
  • Reduce heat to a simmer and cover the pan, Simmer for 18 to 20 minutes
  • Fluff with a fork and serve
