Pecan Pie Muffins

This is by far my new favorite snack or dessert recipe. These Pecan Pie Muffins taste just like pecan pie but without all those calories!

Mocha Granola Bars

Shopping List:

  • 1/3 cup Light Brown Sugar, packed
  • ¼ cup Peanut Butter
  • ¼ cup Honey
  • 4 tablespoons Unsalted Butter
  • 2 tsp Espresso Powder
  • 2 tsp Unsweetened Cocoa Powder
  • 2 cups Quick Oats
  • ¾ cup Crispy Rice Cereal
  • ½ cup Sliced Almonds
  • ¼ cup Chocolate Chips

Instructions:

  • In a saucepan, combine brown sugar, peanut butter, honey and butter and cook over medium-low heat until it comes to a boil
  • Stir in espresso powder and cocoa powder and continue cooking for another 2-3 minutes
  • Stir in oats, crispy rice cereal, and almonds and combine
  • In an 8×8 baking dish, place parchment paper so it hangs over the side
  • Once mixture cools, push into dish
  • Sprinkle chocolate chips on top and press into bars
  • Let bars set up for 1-2 hours before cutting granola bars

Almond Butter Toast

Shopping List:

  • Almond Butter
  • Bread or English Muffins
  • Bananas or Strawberries
  • Cinnamon Sugar
  • Sliced Almonds

Instructions:

  • Using a toaster, prepare bread or english muffins
  • Spread a layer of almond butter on top of bread
  • Layer with either bananas or strawberries
  • Sprinkle on sliced almonds
  • Sprinkle  cinnamon sugar on top (optional)

Cinnamon Sugar Bananas

Shopping List:

  • Banana, cut into rounds
  • 2 tablespoons sugar
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg

Instructions:

  • Slice the banana into rounds
  • In a small bowl, combine the sugar, cinnamon and nutmeg
  • In a large skillet with non-stick spray, add banana rounds and cook for a few minutes
  • At the 2 minute mark, sprinkle the cinnamon sugar mixture on top of each banana round
  • Turn over and add more of the mixture and cook for a few minutes more

Ice Cube Coffee

Other than green tea, this Ice Cube Coffee recipe is my afternoon go-to drink. This gives you the boost coffee gives you but without being a hot drink.
