5 Quick & Easy Black Bean Recipes

Black Bean Tacos

We all love tacos but have you ever had Black Bean Tacos? These will quickly become your favorite EVER!

Black Bean Quesadillas

Shopping List:

  • Black Bean mixture from Black Bean Tacos
  • Flour Tortillas
  • Mexican Shredded Cheese

Instructions:

  • Heat up your skillet and put one flour tortilla on the pan
  • Sprinkle with shredded cheese, then add the Black Bean Taco mixture and cover with a second flour tortilla
  • Once the cheese starts to melt, flip the quesadilla and heat up on the other side
  • Remove from heat and cut into triangles

Chicken and Rice with Black Beans

Shopping List:

  • 1 1/2 cups Rotisserie Chicken, chopped
  • 1 tablespoon Olive Oil
  • Green Onions, chopped (separate the light and dark portions)
  • 2 cloves Garlic, minced
  • 1 1/2 cups Chicken Broth
  • 1 (4 oz) can Green Chilies
  • 3 tablespoons Lime Juice
  • 1 can Black Beans, rinsed and drained
  • 2 cups Minute Brown Rice
  • 1/3 cups Cilantro, chopped
  • Salt & Pepper to taste

Instructions:

  • In a large skillet, heat up the olive oil and add the chicken, garlic and light green portions of the green onions
  • Stir in broth, remainder of green onions, green chilies, lime juice, black beans and season with salt and pepper
  • Bring mixture to a boil, add rice and boil for another 30 seconds
  • Remove from heat and cover with lid and let rest for 6-8 minutes
  • Once rice is cooked and broth is absorbed, mix in cilantro and serve

Black Bean Pudding

Shopping List:

  • 1 can Black Beans, rinsed and drained
  • 1/4 cup Cocoa Powder
  • 4 Tablespoons Maple Syrup
  • 2 Tablespoons Vanilla Soy Milk
  • 1/4 teaspoons Vanilla Extract
  • 1/8 teaspoon Salt

Instructions:

  • Put all ingredients in a food processor and puree until smooth
  • Place in bowl (or several bowls) and chill in the refrigerator for 20-30 minutes
  • Serve cold
