The book, St. Patrick’s Day in the Morning by Eve Bunting, makes a great story to go along with these St. Patrick’s Cinnamon Rolls.
It is a wonderful story about a young boy who is told he is too young to participate in the St. Patrick’s Day parade. Not to be deterred, he rises early on the morning of St. Patrick’s Day to hike the parade route with his dog to prove that his family was wrong.
Along the way Jamie is given a roll by Mrs. Simm’s of the Half Way Up Sweet Shop. Jamie makes it to the top and leaves something so no one will question who made it up the hill first.
Here’s how to make yummy St. Patrick’s Cinnamon Rolls:
St. Patrick’s Cinnamon Rolls
Ingredients:
- 1 can of biscuit dough
- 1 Tablespoon ground cinnamon
- 3 Tablespoons butter, melted
- 2 cups powdered sugar
- 1/2 teaspoon vanilla extract
- 2 Tablespoons milk
- 8 drops green food coloring
- Green Sprinkles
Directions:
First, open can of biscuit dough and lay each biscuit out individually on an ungreased cookie sheet. For a special touch you could even slightly flatten out each biscuit and using a cookie cutter cut them into shamrock shapes.
Next, in a small bowl mix together ground cinnamon and melted butter. Using a brush or the back of a spoon, spreading out cinnamon and butter mixture evenly onto each unbaked biscuit.
Now bake the biscuit according to the package instructions on the can. Allow to cool for a few minutes before proceeding to the next step.
To make the green icing, mix together the powdered sugar, vanilla, green food coloring, and about half of the milk using a wire whisk. Drop by drop add enough remaining milk to make a thick and smooth icing. Pour icing onto each cinnamon roll. Immediately sprinkle with green sprinkles before the icing dries on top.
