Summer Flank Steak Wraps

Summer Flank Steak Wraps make the perfect lunch or dinner dish for warmer weather. It’s also a super healthy way to get protein and healthy fats into your diet. Not only are they pretty enough for invited guests, but kids love these wraps too!

One of the nice things about grilling outside is that you’re not heating up your house. Who wants to do that during the heat of the summer? You’re going to love these Summer Flank Steak Wraps and your kids are going to love them too.

Summer Flank Steak Wraps

Ingredients

For the steak and marinade:

  • 1 to 2 pound flank steak
  • scant 1 1/2 cups pure maple syrup
  • 3 Tablespoons tart cherry concentrate (or really tart pure cherry juice)
  • 1 Tablespoon balsamic glaze
  • dash of sea salt

For the wraps:

  • 1/2 red pepper, diced
  • 1 ripe avocado, cut into wedges
  • optional, we tossed some leftover sauteed mushrooms
  • small flour tortilla wraps

Directions

Combine the liquid ingredients and add in the steak, fully coat, seal and chill for up to 48 hours.

When ready to cook, place on the counter for about 45 minutes before heating. Turn the grill to roughly medium or 400 degrees and allow to come fully up to temp before adding the meat.

Cook on each side about 4 minutes or until you hit the temperature you would like (cooking time will vary quite a bit depending on the size, shape, thickness and heat of the meat and grill so keep a close eye).

Allow the meat to rest for about 10 minutes before slicing into long strips and adding to your warmed tortillas.
