5 Sides for an End of Summer BBQ

And now on to today’s recipes!

Parmesan Potato Wedges

Shopping List:

  • 3-4 large russet potatoes, sliced into wedges
  • 4 tablespoons olive oil
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 2 teaspoons Italian seasoning
  • ½ cup shredded parmesan cheese
  • Parsley
  • Ranch dressing for dipping

Instructions:

  • Preheat oven to 375
  • Add aluminum foil to baking sheet and spray with non-stick spray
  • In a large bowl, drizzle potato wedges with olive oil
  • In a separate bowl, whisk together salt, garlic powder, and Italian seasoning
  • Sprinkle wedges with shredded cheese and then with seasoning mixture
  • Put the potato wedges on baking sheet and bake for 25-35 minutes or until the potatoes are tender
  • Add parsley on top
  • Use Ranch dressing for dipping

7-Layer Dip

Shopping List:

  • 1 (31 oz can) Refried beans
  • 1 package Taco Seasoning
  • 1 1/2 cups Sour Cream
  • 2 cups Guacamole
  • 1 (24 oz) jar medium salsa
  • 1 cup shredded cheddar cheese
  • 3 Roma tomatoes, diced
  • 1 (4oz can) sliced olives
  • 1 bunch green onions, sliced thin
  • 1/4 cup cilantro, chopped
  • 1/2 lime
  • Salt & Pepper
  • Tortilla chips

Instructions:

  • In a mixing bowl, stir together beans and taco seasoning
  • Spread this mixture into bottom of serving dish
  • Next add a layer of sour cream
  • Then layer the salsa and cheese
  • In another bowl, mix together the tomatoes, cilantro and onions
  • Squeeze the lime juice on top and add salt & pepper to taste
  • Stir together and add to top of cheese
  • Top with olives
  • Serve

We all love the perfect Summer Macaroni Salad. And it goes with just about everything! I hope you enjoy this recipe, it’s my grandmothers!

Chick-fil-A Cole Slaw

Shopping List:

  • 4 teaspoons distilled white vinegar
  • ¼ cup sugar
  • ¼ teaspoon dry mustard
  • ¼ teaspoon salt
  • 1 cup mayo
  • 2 10 oz bags shredded cabbage, chopped
  • ¼ cup carrots, diced

Instructions:

  • Whisk together the vinegar, sugar, mustard, and salt until the sugar is dissolved
  • Add may and whisk together
  • Add cabbage and carrots and combine
  • Refrigerate for 2 hours
  • Serve
