This Country Bacon Gravy with Easy Homemade Biscuits recipe is a twist on the classic country sausage gravy and biscuits.  We used bacon instead!

What you need to make Country Bacon Gravy with Easy Homemade Biscuits:

For the gravy:

  • 8 oz bacon
  • 3 tablespoons butter
  • 3 tablespoons all purpose flour
  • 2 cups milk
  • 1 teaspoon onion powder
  • 1 teaspoon Italian blend seasoning

For the biscuits:

  • 1 stick of cold butter, cubed
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2/3 cup milk

To make the biscuits, preheat the oven to 425.  Start by adding the cold cubed butter to a food processor with one cup of flour. Pulse until mixture is crumbly.  Add the remaining flour and all dry ingredients.  Pulse again 3-4 times to combine.

Pour the biscuit mixture into a large bowl , gradually add the milk while stirring.  Dough will be thick, but should not be dry and crumbly.  If you need more milk, add 1 tablespoon at a time.

Once dough can be shaped into a ball, in the bowl without being sticky, it is the right consistency.  Dust a hard, flat surface with flour and roll the dough out to 1 inch thick.  Cut with circle cutters.  Place on cookie sheet and bake for 8-10 minutes or until golden brown.  Our 4″ circle cutters made 8 biscuits.

To make the gravy, place bacon strips on sheet pan and bake in the oven on 425 until crispy, roughly chop and set aside.

Add butter to a skillet, heat on medium low until melted. Add the flour, stir until smooth. Add the bacon and seasonings.

Pour in the milk, increase heat to medium-high and whisk until combined.

Cook until gravy starts to thicken reduce to simmer.

Simmer for about 5 minutes.  Spoon gravy over warm biscuits.

This would be awesome to make as a “breakfast for dinner” meal and this really is a nice change from sausage gravy.  Homemade gravy can have a learning curve when making it, but don’t give up this one is worth it!
