Dr. Seuss’ birthday is coming up on March 2nd so why not celebrate with your family by reading your favorite Dr. Seuss book and enjoying some Green Eggs and Ham! These are some green eggs you’ll want to eat. Even if your name is Sam-I-Am.
Speaking of Dr. Seuss how about these One Fish, Two Fish Cupcakes for dessert.
Don’t just think you can only eat our Green Eggs and Ham on Dr. Seuss’ birthday, because they make a great breakfast recipe any time of the year! They would be so much fun to serve on St. Patrick’s Day (March 17th) for the kids (or yourself) too. The parsley is what makes the eggs green–no artificial dyes or colors.
Green Eggs and Ham
Ingredients
- 6 eggs
- 6 slices of ham
- 1 small onion, minced (you can omit if you have picky eaters)
- 2 Tablespoons butter or olive oil
- 1/2 cup parsley, chopped
- ground paprika, to garnish
- salt and pepper, to taste
Directions
Preheat oven to 350 F. Spray a large muffin tin with non-stick cooking spray.
In a medium skillet melt butter or heat olive oil over medium high heat. Saute onion until soft and translucent, about 3 minutes. Remove from heat.
Take one slice of ham and carefully line the muffin well, using kitchen scissors if needed. Equally spoon out onion mixture over each slice of ham. Top with one whole egg. Sprinkle with chopped parsley and paprika. Season with salt and freshly ground pepper.
Cover with foil and bake for about 15 minutes or until eggs are set. Allow to cool briefly in pan and then carefully remove. Serve immediately while still warm. This breakfast recipe goes well with hash browns and a tall glass of orange juice.
